Aside from adding a substantial amount of salt to the water, the secret to pleasing a picky Italian nonna is to drain it when it's al dente.  

Pasta salad, on the other hand, is more tolerant and tastes even better with overcooked noodles. 

Although al dente noodles are at their most attractive when served warm, they do not fare well when chilled.

Retrogradation occurs when cooked pasta is placed in the refrigerator, causing its natural starch molecules to change into ones that are resistant and stick together.  

This is why the pasta has this texture. It becomes stiff and nearly rubbery as a result of this tightening.  

You should not rinse the noodles until they are cold; nevertheless, you should be careful not to let the water run too quickly.
