The food in New Orleans is amazing. Some American cities have signature meals, but New Orleans has many wonderful ones.

A classic American cuisine is roux-thickened, brown Louisiana gumbo with thick slices of Andouille sausage, chicken, or shellfish.  

Jambalaya was inspired by Spanish and West African settlers. A good jambalaya recipe comprises rice, andouille sausage, shrimp, Louisiana's vegetable trinity (celery, onions, and green peppers), and many spices.
