Bourdain, Andrés, and other culinary giants' recipes

The daily education aspect of my profession is one of my favorites. I regularly explore new cuisines, foods, and techniques to enhance my repertoire.  

Recreating recipes from culinary legends—The Greats—has taught me a lot. Reading about their accomplishments and legacies is vital, but cooking adds a new level to understanding and appreciating their work.  

We selected recipes from our favorite chefs, home cooks, and cookbook authors from our archives.

Others are regional and national cuisine experts, some have Michelin stars and James Beard honors, and some are famous from television.   

Their claims to fame vary, but they all love delicious cuisine and want to share it.  

Edna Lewis, the belle of Southern cookery, had a major culinary influence in America.  

Her vegan baked beans have the delicious, smoky, and slightly sweet tastes of this regional cuisine.
