Hawaii's traditional cuisine includes poi, laulau, kalua pig, taro, luau leaves, sweet potatoes, and raw and cooked seafood.   

According to Felix Tai, Executive Chef, Polynesian Cultural Center, it combines Polynesian, Asian, and Western flavors.  

Local chef and journalist Kiki Aranita said Polynesian settlers brought and grew Hawaii's traditional cuisine.   

Kalo (or taro), baked in an imu (an underground furnace) and steamed with Hawaiian sea salt, was the main starch in traditional meals.
